THE SPREAD OF THE SHISHBARAK/CHUCHVARA
From Ancient Persia, the joshparag passed into Arab tradition. In the Middle Ages, Iranian merchants introduced the dumpling to the Finno-Ugric peoples of Western Siberia who called it pelnan or “ear bread,” a meaning very similar to that of chuchvara, “lamb’s ear.”
