ETYMOLOGY

"Shishbarak"

The shishbarak is a dumpling native to the cuisine of a vast swath of territory within the Middle East and Central Asian regions. The word shishbarak is thought to be a direct derivative of the ancient Persian joshparag and the Arab joshpara. “Josh” means “to boil” and “para” or “parcha” is thought to mean “piece” (Rodinson, Perry). In modern Iran, the name for this dumpling is gosh-e barrah or gush-e barreh, which translates into “lamb’s ear” (Rodinson, Perry 254).

"Chuchvara"

The Uzbeki chuchvara is a variation on the word gosh-e barrah and was eaten by nomadic and seminomadic Uzbeks, some of whom, from the Zarafshan Basin, called it barak. Uzbeks from the Kipchacks of northern Fergana called it ovi.
