PREPARING THE DOUGH

Shishbarak

The dough for the shishbarak is prepared with a variation on the following:

1 ½ cup all-purpose flour (modern recipes)
½ tsp. salt
½ to 2/3 cup cold water

Sift dry ingredients together, then pour in water. Blend mixture until a soft dough is formed then lightly knead until smooth. Cover and let sit for 30 minutes.
