Filling Ingredients from The Georgian Feast by Darra Goldstein:
1 lb mixed ground beef and pork (not too lean)
1/2 tsp freshly ground black pepper
1 1/4 tsp salt
Pinch cayenne
1/4 tsp ground caraway seed
3 small onions, peeled
1/2 cup warm water or beef bouillion
Mix the ground meats and spices. Grind the onions and stir them into the meat mixture. Knead in the water or bouillion.
Table 1. There are many variations of khinkali depending on the region of Georgia. The most common filling typically includes a mixture of beef and pork, mixed with onions, red pepper, black pepper, salt, and, for many, some type of green herb such as coriander, parsley, cilantro or savory.
The following list includes the main spices found in various khinkali fillings, but not all of these are used at once:
cilantro, fenugreek leaves, red chile flakes, black pepper, cayenne, ground caraway seed, dill, nettles, parsley, salt, coriander, savory.
