To form the dumplings, the dough needs to be shaped into circles. In order to do so, some recipes call for the dough to be rolled into a long shape, resembling a snake, then cut into pieces. After the dough is cut into pieces, the cook is instructed to roll out and flatten out each piece before filling. Another common way is rolling out full sheets. After this step, some choose to use a machine specially created to create uniform, perfect dumplings. If one chooses to do it by hand, however, the cook continues by cutting out circles from a glass. After the cook has prepared the dough and the filling, he/she is instructed to fold the dough over onto itself to create a half moon shape. Next, to create the identifying “ear shape,” the ends are brought together. Many times the cook will dust the pelmeni with flour after they are formed so they do not stick together.
