I did my dumpling project of Ravioli, a term whose etymology is difficult to determine. Ravioli’s first citations were in Latin, and, while it did not exactly mean the wrapped and stuffed pasta we associate with it today, it is assumed the person who coined the term thought it best described the dish. The Enciclopedia edited by Guarnaschelli Gotti gives the possible etymology stemming from the medieval “rabiola”, from the latin word rapa, meaning turnip, which speaks to the fact that the old filling made from ricotta was probably wrapped in turnip leaves.
